Slow Cooker Teriyaki Chicken

This slow cooker teriyaki chicken turns a simple soy, honey, ginger, garlic, and brown sugar sauce into a glossy coating for tender chicken. It is an easy make ahead dinner that works well over rice with steamed or roasted vegetables.

  1. Place the chicken in a slow cooker. Whisk the soy sauce, rice vinegar, honey, brown sugar, garlic, and ginger, then pour the mixture over the chicken.
  2. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the chicken reaches 165°F and is tender.
  3. Transfer the chicken to a plate. Pour the cooking liquid into a saucepan and bring it to a gentle simmer.
  4. Whisk the cornstarch and cold water until smooth. Stir the slurry into the simmering sauce and cook for 1 to 2 minutes, until thickened.
  5. Slice or shred the chicken and coat it with the sauce. Serve over rice with green onions and sesame seeds, if desired.
