Slow Cooker Ham and Potato Soup

This slow cooker soup turns ham, potatoes, carrots, celery, onion, garlic, thyme, and broth into a cozy one pot meal. A small amount of cream softens the savory broth while leaving the vegetables and smoky ham clearly defined.

Let’s cook.

  1. Add the onion, carrots, celery, garlic, chicken stock, bay leaves, thyme, potatoes, ham, and black pepper to a slow cooker.
  2. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes and vegetables are tender.
  3. Remove the bay leaves and thyme stems. Mash some of the potatoes in the slow cooker if you prefer a thicker soup.
  4. Stir in the heavy cream. Cover and cook on low for 15 minutes more, until warmed through.
  5. Taste and add salt only as needed because the ham and stock may already be salty.

A meaty ham bone can cook with the soup for added flavor. Remove it before serving and return any usable meat to the slow cooker.
