Slow Cooker Ham and Potato Soup
This slow cooker soup turns ham, potatoes, carrots, celery, onion, garlic, thyme, and broth into a cozy one pot meal. A small amount of cream softens the savory broth while leaving the vegetables and smoky ham clearly defined.

- Add the onion, carrots, celery, garlic, chicken stock, bay leaves, thyme, potatoes, ham, and black pepper to a slow cooker.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes and vegetables are tender.
- Remove the bay leaves and thyme stems. Mash some of the potatoes in the slow cooker if you prefer a thicker soup.
- Stir in the heavy cream. Cover and cook on low for 15 minutes more, until warmed through.
- Taste and add salt only as needed because the ham and stock may already be salty.
