Shrimp with Celery and Cashew Stir Fry
This quick stir fry pairs tender shrimp with crisp celery, roasted cashews, ginger, garlic, scallions, soy sauce, sesame oil, and rice wine. It is savory, aromatic, and full of contrasting textures, with optional red pepper for a sharper finish.

Let’s cook.
- Whisk the soy sauce, sesame oil, and rice wine together in a small bowl. Finely mince or grate the ginger and garlic.
- Heat a large skillet or wok over high heat for about 2 minutes. Add 1 tablespoon vegetable oil, then add the celery, cashews, and 1/4 teaspoon salt. Stir fry for 2 to 3 minutes, until the celery is crisp tender. Transfer to a plate.
- Add the remaining tablespoon vegetable oil. Add the shrimp and remaining salt and cook for about 2 minutes per side, until pink and nearly opaque.
- Add the ginger, garlic, red pepper flakes, and scallion whites. Stir fry for 30 seconds, until fragrant.
- Return the celery and cashews to the pan. Add the sauce and most of the scallion greens. Toss for 1 minute, until the shrimp are opaque and everything is evenly coated.
- Transfer to a serving dish and garnish with the remaining scallion greens.
