One Pan Baked Frittata
This baked frittata is a flexible breakfast formula for using cooked meat, vegetables, herbs, and whatever cheese you have on hand. It comes out creamy in the center, lightly golden on top, and sturdy enough to slice for breakfast or brunch.

- Heat the oven to 400°F. Butter an 11 or 12 inch round baking dish.
- Spread the cooked meat and vegetables evenly in the dish. Sprinkle 1 cup of the cheese over the fillings.
- Whisk the eggs, cream, salt, and black pepper until completely combined.
- Pour the egg mixture over the fillings and top with the remaining 1/2 cup cheese.
- Bake for 18 to 22 minutes, until the center is just set and the top is lightly golden. Rest for 5 minutes before slicing and topping with herbs.

Cook watery vegetables before adding them so the frittata stays firm. Any meat should also be fully cooked before it goes into the baking dish.
