- Heat the oven to 450°F. Line a baking sheet with parchment paper.
- Whisk the flour, sugar, salt, baking powder, and cream of tartar in a large bowl.
- Cut the cold butter into the flour mixture with a pastry cutter or your fingertips until pea size pieces remain.
- Whisk the egg and milk together. Add them to the flour mixture and stir just until a sticky dough forms. Do not overwork the dough.
- Turn the dough onto a lightly floured surface and pat it to a thickness of 3/4 to 1 inch. Cut biscuits straight down with a floured cutter without twisting.
- Arrange the biscuits on the baking sheet, brush the tops with melted butter, and bake for 15 to 17 minutes, until tall and golden.
