Frybread
This frybread uses a simple baking powder dough that rests briefly before being shaped and fried until puffed and golden. The finished pieces are crisp outside, tender inside, and ready for savory toppings or a sweet finish.

- Whisk the flour, baking powder, and salt in a large bowl.
- Gradually stir in the hot water until a soft dough forms. Knead gently in the bowl just until the dough comes together.
- Cover the dough and let it rest for 30 minutes. Divide it into 8 equal pieces and shape each piece into a round about 1/4 inch thick. Make a small opening in the center of each round.
- Pour 1 to 2 inches of vegetable oil into a heavy pan and heat it to 350°F. Keep the pan no more than halfway full.
- Fry one piece at a time for 20 to 30 seconds per side, until puffed and golden. Drain on paper towels or a rack and keep warm in a 200°F oven while frying the rest.

The dough should be soft but easy to handle. Keep water away from the hot oil and let used oil cool completely before transferring it to a sealed container for disposal.
