Ground Turkey Tamale Pie

  1. Heat the oven to 400°F. Butter a 9 inch deep pie dish or a 2 quart baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the turkey, onion, bell pepper, and garlic. Cook for about 8 minutes, breaking up the turkey, until it reaches 165°F and is no longer pink.
  3. Drain any excess liquid. Stir in the cumin, pinto beans, tomatoes, chipotle peppers, and adobo sauce. Bring to a simmer and cook for 5 minutes, until slightly thickened.
  4. Remove the skillet from the heat. Stir in the cheddar and cilantro, then spread the filling in the prepared dish.
  5. Prepare the cornbread mix with the egg and milk. Spread the batter evenly over the filling.
  6. Bake for 20 to 25 minutes, until the cornbread topping is golden and cooked through. Rest for 5 minutes before cutting.
