Crockpot Chicken Fajitas
These easy Crockpot Chicken Fajitas combine tender seasoned chicken, colorful bell peppers, onion, tomatoes, and fresh lime in one simple meal. Expect plenty of cooking juices and soft vegetables that are ready to pile into warm tortillas with your favorite toppings.

- Place half of the sliced bell peppers and onion in the bottom of a 6 quart slow cooker. Arrange the chicken breasts over the vegetables.
- In a small bowl, combine the chili powder, cumin, paprika, coriander, salt, black pepper, and brown sugar. Sprinkle the seasoning evenly over the chicken.
- Add the garlic and pour the tomatoes with green chiles over the chicken. Top with the remaining bell peppers and onion.
- Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chicken is tender and reaches 165°F in the thickest part.
- Transfer the chicken to a cutting board and let it rest for 5 minutes. Slice or shred the chicken, then return it to the slow cooker.
- Stir in the lime juice and toss everything with the cooking juices. Serve in warm tortillas with your favorite toppings.
