Pad Kra Pao (Holy Basil Pork Stir Fry)

I made this for the fist time around the middle of June 2020 and it completely blew my mind. I’ve at least made it 6 other times and it’s NYE today writing this. This is one of those perfect meals. Hits all the flavor notes! We even made this once for breakfast and it really made for a great morning. The addition of the egg puts this over the top.

Pad Kra Pao (Holy Basil Pork Stir Fry)

Spicy, sweet pork stir fry that is perfect over jasmine rice

Ingredients
  

  • 3 Tbsp Vegetable Oil
  • 2 Shallots thin sliced
  • 7 Cloves Garlic chopped
  • 3 Thai chilies thin sliced
  • 1 Pound Ground Pork
  • 1 Tsp Sugar
  • 1 Tbsp Fish Sauce
  • 1 Tbsp Dark Soy Sauce
  • 1 Tbsp Light Soy Sauce
  • 2 Tsp Oyster Sauce
  • 1/3 Cup Chicken Broth or Water
  • 1 1/2 Cups Packed Holy Basil or Thai Basil
  • 4 Eggs

Instructions
 

  • In a wok or large skillet over med high heat add the oil, shallots, and garlic. Stir fry for 3 minutes. Add sliced chilies and cook for a minute. Turn up the heat to high and add ground pork. Break up the pork as it cooks and allow to slightly crisp.
  • Add sugar, fish sauce, soy sauce, dark soy sauce, and oyster sauce. Stir fry for a minute longer. Deglaze the pan with the broth or water and scrape bottom of pan or wok. Liquid should evaporate quickly over the high heat. Add the basil and stir fry until wilted. Serve over rice.
  • Fry 4 eggs to desired doneness. Top each serving with an egg.
