Cordon Bleu Breakfast Sandwiches w/ Maple Mustard Sauce

Sweet and savory combine over a bed of fluffy scrambled eggs

Ingredients
  

Maple Mustard Sauce

  • 1/2 Cup Mayonnaise
  • 1/8 Cup Maple Syrup
  • 1 Tbsp Whole Grain Mustard

Breakfast Sandwich

  • 4 Eggs
  • 1 Tbsp Milk or Heavy Cream
  • 1/4 Tsp Onion Powder
  • 1/8 Tsp Garlic Powder
  • Salt to taste
  • Ground Black Pepper to taste
  • 1/2 Cup Shredded Swiss Cheese
  • 6 Slices Deli Ham
  • 1 Slice Provolone
  • 2 Toasted Buns or Sandwich Rolls Your choice really. I've used croissants, english muffins, bagels, even plain white bread.

Maple Mustard Sauce Instructions

  • Whisk the mayonnaise, maple syrup, and mustard together. Chill until ready to use.

Breakfast Sandwich Instructions

  • Preheat oven to 350 degrees.
  • Beat the 4 eggs with the milk, onion powder, garlic powder, salt, and pepper.
  • Add butter or oil to a frying pan and heat to medium low. Spread melted butter evenly across pan. Add the beaten eggs and let set for about 30 seconds and then slowly start stirring the curds that form. Keep stirring occasionally piling the cooked eggs over the uncooked until all eggs are scrambled and cooked through.
  • Meanwhile make 2 stacks of 3 slices ham each and put on a baking sheet. Layer the provolone over the top and the swiss cheese on top of that. Bake for 5-8 minutes until cheese is completely melted. This can also be done in another pan or microwave – whatever is easiest for you.
  • Layer the scrambled eggs on the toasted bun. Take a spatula and set the layer of ham and cheese over the eggs. Pour the maple mustard sauce on top. Enjoy!
